Vegan Cuisine

I Just made some tasty soy ice cream!  I have the base recipe, and then suggestions for flavors.  The sky is the limit though!

Soy Ice Cream

2 1/2 C. Vanilla soy milk
1 block extra firm silken tofu
1 1/2 C. sugar
2 tsp. vanilla extract

Blend in a blender until smooth.  All flavorings need to be strong  as soy takes on the flavors.

Vanilla - Add at least 2 more tsp. vanilla extract or fresh vanilla bean
Pumpkin - 3 C. pureed pumpkin, 2 tsp. cinnamon, 2 tsp. nutmeg, 2 tsp. ginger, 1 tsp. allspice.  Can add crushed graham crackers after the ice cream is frozen to really make it pumpkin pie.
Chocolate - 1/2 C. cocoa powder, and 1/2 C. more sugar.

Vegan Caramel Popcorn

25 large marshmallows
2 C. brown sugar
1/4 C. light corn syrup
1 C. butter flavored vegetable shortening
1 tsp. vanilla

7oz. popped popcorn

Melt marshmallows with the other top 5 ingredients in a sauce pan.  (About 5-7 min.)  Pour over popcorn and stir to coat.  Topping stays soft!

Aloo Gobi (Indian style potatoes and cauliflower)

1 Tbl. vegetable oil

1 tsp. ginger paste
1 tsp. minced garlic
2 med. potatoes - peeled and cubed
1 tsp. cumin
1/2 tsp. turmeric
1/2 tsp. paprika
1/2 tsp. garam masala
salt to taste
1 lb. cauliflower
1 tsp fresh chopped cilantro

Heat oil in a skillet on med. heat.  Add ginger and garlic.  Let garlic lightly brown.  Add potatoes, cumin, turmeric, paprika, garam masala, and salt. Cover and cook 5-7 mins., stirring occasionally.  Add chopped cauliflower and cook until tender (about 10 min.).  Top with cilantro.

Bean Burritos

Flour Tortillas
1 can vegetarian re-fried beans or black beans - warmed
2 C. cooked rice - warm
1 C. shredded lettuce
salsa
Avocado salsa: mix the following ingredients together in a bowl
2 avocados - peeled and diced
1 large tomato - diced
1 tomatillo - diced
1 bunch fresh cilantro - chopped
Lemon juice to taste
Salt to taste

Layer all toppings onto a tortilla.  Roll and serve.
